As owner of several successful restaurants and bars, Damian Collins brings a unique understanding of the hospitality business to Waterman’s Harbor. A successful commercial developer and property manager, Damian used his expertise in building design and remodeling to create spaces that are warm and inviting. Damian believes it is important to create a space to gather with friends and enjoy good food.
Tim’s first experience in the hospitality industry was like so many others - a great way to make money. However, he quickly found the sense of pride that comes with providing great guest experiences was extremely fulfilling. After various management roles over the past decade, Tim settled in as GM at Waterman’s. Tim prides himself on helping his team provide the best guest experience possible.
Chef Trujillo was trained at California Culinary Academy in San Francisco. Since then, he has worked at Studio (Montage Hotels & Resorts), Michael Mina Stonehill Tavern, Church & State, Hollywood’s BOHO Gastropub, Salt Creek Grille and CUCINA enoteca. Now head chef at Waterman's Harbor, Chef Trujillo is keen on crafting seasonal dishes that pair perfectly with the restaurant’s extensive wine and cocktail list.
